I let them ripen before i use them. I cook mine and freeze them, then i add a bit to what ever i want.

I don't use sugar when cooking, use honey. Gives a much better flavour and cook them in the microwave one at a time. Depends on the size of the apple. Only cook them until they're a bit soft, but not mushy because they keep on cooking after.

I have no choice and they were picked by ex. He's offloading them to me. When I did the same with my potatoes, he moaned and son was annoyed with both of us! I prefer slowing cooking them. Should I slow cook them and freeze them?

Agree with Logan honey and mixed spice is good would use shop brought puff pastry roll out using iceing sugar instead of flour stewed apples with blueberry parcels they can be cooked from frozen nice with yogurt and mint !

Good idea. I have some pastry in the freezer. What mixed spice should I use - cinnamon? what else please? Please pc me the complete recipe with a bit of measurements. I'd love to get SON to do it! I'm not stupid!:LOL:

Cinnamon is gd or just mixed spice I don’t use recipes just what evers at hand :)

At one point, I said to myself, "Isn't it nice to be married to a builder? All household repairs can be eliminated in no time." Now, I think I'd love to have a chef as a partner! Only joking! But I do love foods .. although cooking fruits is so alien to me! I'm one who stands next to a fruit tree and eats from it.

I wouldn't mind any on that page! Such divine looking delices ...

I was lucky that my first head chef used to be executive chef on the qe2 so learnt lots very quickly you had to or you were gone

Cloves (Good old Granny )
Nutmeg ( yum)
Mint
Sage
Anise
Rosemary

Add a sprinkle and taste test......you'll be pleasantly surprised at what works well with apples.
It does of course depend on what you are cooking..savoury or sweet dishes(y)

I have no nutmeg! I love cloves though. Most trusted enhancer, especially to lamb and pork. I need to sweeten the tarty horrible thing. Last time, I let it go moudy!:eek: despite hours of slow cooking. Just couldn't stomach the tartiness!

He was a beast of a man even in his 60s he would work 6days a wk from 7am till 11pm and expected you to do the same when I was 17 I said to him I had finished all my jobs and had nothing to do he picked up 3 trays of eggs and chucked them at the wall then told me to clean them up
Rest of my working life in a kitchen I will always find something to do lol:)

It is very sad...head in the sand maybe, but I can't watch those types of programmes..too upsetting:(:cry:

We don't have' cookers' but luckily my Dad and neighbour do so I have stocked up our freezer:)(y)

Yes, those programmes are petty and silly. A lot of fuss while a tiny line along the dish. The recipes have all sorts of unique ingredients. But I'd looooooooove to be a food critic AKA taster! I will be a very good one! :D:D:D

That was the norm have seen commis chefs in a walk-in freezer stirring a tub of water for an hour thinking he was making sorbet another up a step ladder dropping dough into a frying pan thinking he was doing drop scones
Kitchens in the 90s was not for the weak !

Thank heavens that kitchens are more humane now. But still, imagine working for the foul mouth Ramsay! Abuses seemed to be so prevalent in the old days when people knew no better. Some vile bullies dished to their fellow colleagues whatever they deemed fit .. and people took it in pained silence!

Funny thing is Ramsey can’t cook I know lots of people who have worked with him he’s pants !
