Wish it were 9am now! Can't wait for the rain to come. My gardens need a good soaking and drenching. Today is the only day I don't have to go out and sort the things out.

Good morning to all - @Logan - you're so lucky to have had a good soaking alreasdy and I hope we all get some today.

We had a little rain last night not seen forecast for today but fingers crossed .
I rate nados think it’s great value and they get through so many chickens you know it’s fresh .
Hungry now :)

How do they keep it so moist, do you know, @Leeski ? Is it pressure cooker? I now marinate pork and chicken overnight, but the flavours just can't penetrate the meat. Do chefs marinate them sous vide. I wonder if some people inject flavour into meats. Or they marinate them with tons of liquids? Interesting. Ex like very plain meat and put a gravy on top. I love marinated meat. Back home, it's a pinch of salt, pepper, a pinch of sugar, oil and cornflour and a dash of soya sauce. As son likes virgin rice, I haven't been able to use this on him until lately.

Best way to marinade chicken is in a bag lemon and lime will help break down the proteins so you marinade will penetrate the meat chicken needs to be cooked fast and rested for a least 10 mins .
If you oven roast a chicken turn it upside down so the breasts are at the bottom all the juice will stay in the breast meat :)

Sous vide is a trend that only really works with something’s things like duck breasts salmon im old school so won’t have one In my kitchen the younger chefs would put there cornflakes in a water bath if they could !

Yes, I do that, but turn the breast up to brown the skin. We love browned skin. Usually for 30 minutes.

LOL! How do you soften the duck meat? Always so tough. Son loves aromatic duck with pancakes.

Whole duck or breast? Duck loves Chinese 5 spice and Star anise whole duck hot oven for 20 mins then drop temp right down for another hour size of duck pending .
Best duck dish is legs confit :)

Wish I could take you travelling and you will know what you are missing. Have you tried the peking duck with crispy skin in a Chinese restaurant or crispy piglet?? Should try in around Chinese New Year time.

And I have 90%, but I can't even hear rain hitting the lean to glass roof. I had to go out and feel the pathetic spits! And I want to cry to add to wet the ground. Even the ground is not totally wet.

Have you have proper rain, @Upsy Daisy ?

I am fairly well travelled eaten most things including some crazy things.
Street food in Thailand is my food of choice amazing flavours.
But you can’t beat old school French classics beef Wellington done properly is out of this world:) but in the same breath my grandmas cottage pie with pickled red cabbage is off the scale think gardening and food are very similar every days a school day ! :)

I want to sack the Met Office and hopefully the taxpayers can get their £1m bonus back. Totally useless.

Thai food has a certain lovely aroma and flavour .. Will get your beef Wellington recipe too. Why didn't I have a grandma like that - She has done you a lot of favours!:D
