Would you eat these potatoes ?

They look stunning. We have about 2.5 acres and grow vegetables on about 1/10th of an acre. We changed spots this year and the pig is nicely getting the ground dug over now, so potatoes is the order of the day this season. I would eat them certainly....I'm Irish. Nice photos as well.

I've often eaten blue potato chips, and have made my own. Haven't grown any because I haven't found any organic blue seed potatoes yet. Not fond of having them mashed but the chips look pretty nice. Only thing psychedelic about them is the color.

I did the purple green beans, and they are so much easier to pick but.. they weren't as tasty as the Kentucky wonder which I love, so I'm passing on them from now on.

The interesting thing about these new colored vegies is that, in fact, they are old. Some people have kept the strains alive and they are just getting popular again. Purple carrots were actually around long before the orange ones.

I've eaten and am growing purple/blue potatoes. I also got pink potatoes this year for the first time. I love growing anything different. I have asparagus, potatoes, carrots, brussel sprouts, broccoli, mustard greens and french beans all in purple. There are others, but I can't think of them right now.

80% of the potatoes I'm growing this year are purple. I have some pink, too, and the rest are regular potatoes. I love the purple ones. They're probably my favorite kind, but I still like the white kind for mashed potatoes. But just because that's the color mashed potatoes should be :LOL:

The first time I ate blue and purple looking potatoes it was from a farmer's market last year. They were extremely delicious. I did save one and try to grow but I must have done something wrong, it would not come up.

I just learned that carrots used to be purple or yellow, and orange varieties are relatively recent.

You are describing rainbow carrots. They still exist. I LOVE rainbow carrots. I have some red/purple, golden yellow and a deeper orange in the fridge now. They are SO creamy. I especially love the beet colored carrots. They are so very rich in nutrients.

So many plants used to commonly grown in various colors, but somewhere along the line it was decided that carrots were supposed to be orange, asparagus green, etc.

I planted both green and purple asparagus, if I had it to do over, I would plant only purple. It has a better flavor. Not that the green is bad, but the purple is better. Tonight we are having our third meal with asparagus, and maybe out last :(

Last year we had 1 meal, so next year I'm looking forward to being able to have MANY meals of asparagus!

PINK potatoes.. that is a new one to me. How is the flavor? This weekend I'm going to do some searching for my seed potatoes. I hope I can get purple/blue ones.

Unless potatoes are sold as seed potatoes, they may not grow because they are often treated with chemicals to retard the sprouting.

I have eaten blue potatoes, but for some reason I can't stomach them. They gross me out and it has nothing to do with the taste, but just the look of them. I just couldn't do it-but I saw that people have made these into a chip form. I could quite possibly do that. I just didn't like the mushy mashed version of these.

Meowmie - you may well have seen pink potatoes before without realizing it - because as far as I'm aware - pink or red potatoes are only called pink because of the color of their skin - rather than the color of the flesh inside - its is only the blue or purple potato varieties that has the same color flesh as the skin - but are worth growing because of their flavor and texture - which when young are excellent cold or in salads :)



Haha - alexiskilgannon - although I much prefer eating colored vegetables of any kind and actually quite like both the blue and purple potato varieties - I always do my best to avoid them when served in their mashed form - as I too have great trouble trying to eat them :D

The potatoes I got are pink fleshed. They are terra rosa. I cut some of the seed potatoes up and they are light pink inside. Never tasted them, I'm guessing if they will taste similar too most other tators. The purples I have tried taste the same to me.

You are perfectly correct in saying that Terra Rosa potatoes do have pink flesh and although I do agree with you too - I didn't include them when mentioning pink and red potatoes - as to me - their color unlike that of the blue and purple potatoes - is not totally naturally occurring or un-tampered with - as Terra Rosa is a specialty potato cloned especially for its pink flesh.

I too would agree that almost all potatoes taste very similar to each other - the only difference being that because the colored varieties are said to contain more nutrients - they would be the better choice in terms of health benefits :)

Best thing to do is get the water boiling, then dig them up and serve with mint and butter, taste lovely then :)
