When I had a larger garden, the possibilities were endless. I did a lot of canning and freezing of my veggies and fruit. I love stuffed peppers, so when I had a surplus of bell peppers, I would hollow them out and freeze them for stuffed peppers. I usually don't cook meals like that in the summer and when I do the prices of peppers are out of this world, so I found this economical and tasty:)

For the first time we had enough blueberries and raspberries to freeze. Will be great on cold cereal and in muffins later in the year. Never thought I'd not be able to eat everyone. Lol

Tonight I am cooking baby back ribs, baked potatoes and asparagus. Unfortunately none of the veggies were grown in my garden but both the potatoes and asparagus are locally grown :)

I love to cook vegetables with meat. I just do a meat toss with vegetables. I love tomatoes toss with anything. I love onion toss with anything. I love carrots toss with anything. I love salad toss with beef. I like to use pepper in all of my cooking. It just make your food so much better. Food is nothing unless there is some pepper in it. I like to do broccoli with liver as well. I just had some tacos with onion and chicken, lemon and sauce. I just cook some corn. I think vegetables are so exotic and your dish is nothing without it.

A relative gave me several cans of Vienna sausages, because sometimes I eat processed American foods like Spam and Underwood's deviled ham.
Just for the heck of it, I looked up Vienna sausage recipes on Pinterest and there are actually quite a few way to eat Vienna sausages, including fried rice, Filipino spaghetti and omelets. So I might actually use up these Vienna sausages in the near future.

Right now, I'm not cooking, but my husband is! He's making me a good old fashioned hamburger! We're probably going to use some lettuce and tomato from the garden in it. There's nothing like that watery, fresh crunch of homegrown lettuce!

At the moment I'm not cooking anything since its only 5 in the morning. But I will be making some homemade pasta sauce a bit later for a pasta dinner tonight. I will be using up some fresh tomatoes that are starting to soften too much along with my spices and other veggies. I think I may even make a garlic bread:)

It's ridiculously hot again today so I'm just making cold chicken sandwiches with leftover chicken from a chicken I cooked yesterday. I don't want to heat up the house tonight by turning on the oven.

I've just made a courgette (zucchini) and potato dahl using green lentils, lots of tomatoes, onion and spices. Very nice and it keeps for ages in the fridge (although to be honest it usually doesn't make it past the first day!).

My mouth is watering from reading all of the fabulous recipes. When my garden is going strong I saute veggies several times a day with stuff picked just minutes before. I make a casserole with squash where I layer it with other veggies and cheese, a sort of veggie lasagna.

Today I'm cooking some squashes with some corn and cheese. We will have some rice with that! Sadly no, I didn't plant those things  but maybe one day I'll be able to do so! I'd really like to get into preserving and canning once I move out, I also have big plans to dry my own herbs :) That's just a plan tho, hopely I have the chance to make it happen... I stil have a lot to learn (y)

Oooh, that sounds so good! We went to lunch last week at my favorite Indian restaurant and on the buffet there were pakoras, saag, dahl, vegetable korma and something with eggplant. Yum!

You're giving me an idea! I need to get a mandolin so I can get the slices thin enough. I've tried using a knife, but it's just not the best method.

I tried to grow zucchini this time around, but one by one the plants succumbed to something or other and withered away. If I could grow one thing to have year round it would be carrots. I used carrots almost daily when I'm cooking. At least I have my herbs :)
