I give the greens to my mate for his 70-y-o tortoise.LOL! I've never grown the yellow beetroots but buy them pretty much every year. (For those in the Midwest, Meijers always has them by fall.)
They are fantastic roasted, not quite as earthy-tasting as the dark red ones. I've also pickled them.
Beet greens are also tasty, I never throw the greens away.
