I have two eucalyptus that I want to grow bushily rather than massively big. They are approx 8 and 5 feet at the moment. I’ll try to upload a pic. Should I start pruning them now, at this size?

Short answer is Yes!. Late winter and early spring is exactly the right time to do this, and these are quite tough trees. I agree that it will be beneficial to prune them back as they can be a nightmare if allowed to keep growing big. It will take a bit of time and patience, but will result in some very handsome shrubs !
