Entire leaves have been chewed up from one of my roses. What animal does this and how can I prevent it again? I did see a rabbit and a squirrel in my yard recently.

In my garden that would be blamed on Mule Deer (Odocoileus hemionus).
If you can rule them out, then the Rabbit (Sylvifagus audubonii or S. bachmanii) is a likely culprit.

A deer here is highly unlikely. How to make the rabbit go away?
There are barrier methods (fences, cages, etc.).
There are repellent sprays. Recipes made with rotten eggs have a good reputation for effectiveness.
They need to be reapplied fairly often, but less so in dry weather.
Then there are various scare tactics... and of course, more lethal means...
