Pizza Margherita! It is simply a raw pizza dough covered with thinly sliced tomatoes, fresh basil leaves, a sprinkling of finely grated Parmesan or Peccorino cheese, and a drizzle of extra-virgin olive oil, then baked. As JS85 said, simple is best to let the flavors come through.
I also make a lot of marinara sauce and freeze it for winter use, and can tomatoes, and make dried tomatoes to put in olive oil and use for salads and garnish.
