Sweet potato is one of my favourites. I even like them just boiled with a touch of salt.Even the leaves are edible but I have so far not tried using them. We have tried growing sweet potato in our garden. I did succeed once and got about 2 kilos. We have the mongoose menace who attack the moment they 'smell' the formation beneath. Last time it was a total failure. We have once again planted and hope to succeed. The moment we 'smell' a mongoose we shall protect the patch. :)

I love sweet potatoes! Just about any way, but roasted with olive oil, salt and pepper is probably my favourite. I have never thought of eating the leaves - do you use them like any other leafy green?

Cute photo of the mongooses (mongeese?) doing their thing. :D

I love sweet potatoes, and I think Burger King has the best sweet potato fries on occasion. If I cook at home, I cut them up like French fries, and bake them in the oven with a bit of sea salt, and olive oil.

Hahahahaha, those mongooses...! But in all seriousness, in my country sweet potatoes are actually very popular. Back when I was little there were people selling warm ones, cooked with panela. Then you'd just serve them as a desert with some milk ;) I never got to do that myself, but my mother did.

Yum! We're having sweet potato fries tonight - I'm air frying them in my new air fryer! Not tried it before so it's a bit of an experiment.

I am sure your experiment was successful.

They were really nice! The air-fryer didn't make them taste deep fried (which was my impression) but they were still really tasty. Looking forward to trying other veg next time :)

They are. I remember Oprah Winfrey in one of her talks a long time ago was all praises for the sweet potato (lol)
