I have read to stop watering a month before harvesting garlic.
For those who grow garlic, what do you do?
I am planning to plant store bought (softneck?) garlic 2-3 week from now.
If I need to stop watering, I would plant it separately. If not, I would like to plant in raised bed.

Yes, I stop watering my garlic about two weeks prior to harvest...but Nature has its own plans sometimes. I believe reducing the water helps prevent the bulbs from splitting, strengthens the flavor, and enhances long term storage.

I planted next year's garlic crop last week and will harvest it next May.
