Anybody making sourdough bread on a regular basis or otherwise?

Durgan, I tried sourdough bread a couple of years ago, and while we loved the taste and texture, I just couldn't keep up with the starter. That stuff grows faster than the weeds in my garden! I'd end up tossing half of it, and a couple of days later have as much as I started with, although I'd used quite a bit for bread.

I gathered excess starter would be a problem by reading various accounts on the internet. There are mentions about throwing half out on a regular basis and controlling by temperature.

I remember eating sourdough bread as a child, but have never made it myself. I particularly remember the chewy texture and pleasant flavour. Anyway I have some starter brewing now and will give it a try.

I make my home flour from the wheat kernels, since I have a grinding machine. An electric WonderMill, which works like a charm.
