We'll be planting flats of Red Mountain Ice Plant along the perimeter of our property.

For those who have planted this out, what spacing between plantings is generally recommended?

This spreads, so the sparser this can be planted (letting it fill in overtime) is preferable.

1/5' to 2' - between plantings looks sufficient - open to other recommendations.

Yes, you basically answered the question already. If you want complete coverage in a year, plant every six inches, at most. but if you can wait a few years for complete coverage, plant a couple feet apart.
Of course the size of the plants going is needed for proper calculation. If you planted 6-inch pots on 6-inch centers you would have virtually full coverage right off the bat.

Plant Red Mountain™ Flame Iceplant (Delosperma x 'PWWG02S') in full sun, in well-drained soil.
