My mum got this rose plant last May and it bloomed so lovely in August, it didn’t get pruned much during winter but survived and is now growing very nicely. Second photo is last summer

Do I prune it in Spring time? I’m worried about accidentally ruining it as I’ve never properly pruned a rose plant before 😬

Yes roses get pruned in spring time,so you can do it now or next month.
The 3 long branches I'd cut half way below all of the leaves at the top, i wouldn't cut anything else.
