Okra is widely grown and prized across the Southern U.S. It is prolific as long as the pods are harvested regularly. We love it fried, in soups, pickled, and especially good on the grill.
Okra contains a protein called lectin, which is being studied for its role in cancer prevention and treatment. It’s rich in magnesium, folate, fiber, antioxidants, and vitamin C, K1, and A.
The fruit follows the bloom and is best when harvested small as the longer, larger it gets, the more stringy and tough it can become.
In hot humid conditions it is incredibly productive and needs to be picked often to keep up with it.
We will be eating it fresh regularly through September and enjoying pickled okra thereafter.
