Need Help - Tomato Plant Still Struggling!

Hello, hope everyone had a nice bank holiday/Easter!

So this is my tomato plant and the leaves are looking like this still? Given them a good water once and now just not watering until needed, trying to stop my over watering.

The leaves are looking crusty and yellow/brown, does anyone know what I can do to make this tomato plant healthy again? And will it survive?

I think that what you're seeing is the after-effects of your over-watering, which are bound to still show.
The good news is that I think you're going to get away with it!
Usually I would recommend pinching out the sideshoots in vine toms, but this time, I'm going to say, "Don't!"
At least not yet.
They look like they will soon provide some new leaf for photosynthesis, so keep them on just for the moment at least.
I think it's going to be OK, if a little delayed.

Yes, once a week.
Sit the pot on an appropriate sized saucer, & water from underneath.
That way, the tap root, which is built for taking up moisture can do its stuff & the breathing roots theirs.
Even still, you don't need a huge amount in that saucer.
