They changed our planting zone because it has been warmer to 6b.

Did some more reading it might frost after April 20 because of our elevation.

I know last year everything was looking good then had a frost in May.

Then everything felt like I should plant but started cooling down.

I'm to the point if it's looking good plant.

Plant a few at a time once a fortnight from the beginning of March through to the end of May. The first ones will probably not make it, but if you are lucky you will get a well early crop, April ones will probably make it, if you have way too many take out all but the best beginning of June. It works if you are starting with seed, it is so cheap, for bought as small plants use containers you can bring inside, or mulch heavily and buy a few yards of net curtain to cover them if it looks like freezing.
Have you ever considered hot beds? Basically a bed on top of a lot of rotting stuff that will produce a bit of heat. They used to grow pineapples in England in the 1800's using that and a bit of glass.
Know the shape of your land, areas protected by hedges that never get as cold, bottoms of hills where all the cold air flows down and collects on cold nights, that sort of thing, it isn't the same temp. everywhere, unless it's dead flat and open.
