Long lasting vegetables?

Most vegetables tend to get spoilt after a few days of harvest. Even studies on post harvest physiology don't confer alot of benefits due to their perishable nature. The one vegetable that lasts long is the pumpkin family, to be specific, butternuts. They can last for years and one can wait for prices to stabilise before selling. One simply needs to store them in a cool dry place to make sure that microorganisms do not get the better of them to destroy their long shelf life.

I agree, winter squash in general can keep for weeks, even months, if stored right!

Onions and potatoes too.

Beets, cabbage, carrots, onions and potatoes were going to be my suggestions! All seem to last quite a while for me, provided that I store them right! :)

Garlic, onions, and potatoes can also last for weeks if stored properly. Bottle gourd can also last for more than 2 weeks after harvest.

The squash is the counterpart of pumpkin here and I agree that it is long lasting as long as it is kept in the proper place which is not too warm but not too cold. Placed in the vegetable section of the fridge, it can easily last for more than a week. With tubers like potatoes and taro, we just keep it in room temperature for we noticed that they easily get spoiled when in the fridge. However, my husband said that tubers and other root crops can last longer in the fridge if wrapped in old newspaper. Okay, that's it.
