Late vegetables

Last evening we picked and cooked and ate the last peas from the garden. They were as sweet and delicious as the first ones we harvest back in the summer and frankly I'm amazed to have any at all in Wales half way through November. We're leaving the remainder on for seed since I can't remember what variety they were.

Am I better leaving the plants in the ground or pulling them and drying the plants upside down in the greenhouse before taking the pea pods off?

I've never grown peas but I know that some cold weather veggies (such as cauliflower, broccoli, greens) actually taste sweeter after a light freeze. Frost killed off most of the vegetable garden last month but my chard and kale are still hanging on.

I think it depends on how cold the temperature will get. If you still have decent warm weather then leave them on the plants would be best. We are in a very moody weather here, so at this time for us, I would harvest them and dry them indoor.

Peas are legumes. I would leave the roots in the ground over winter, harvest the seeds when dry and the pods about to pop open and then cut the plants off a ground level and put them in the compost pile.

Frost may make peas taste sweeter, but we don't know how that'll affect viability as seed.
We're in for a freeze this weekend; if the pods are good and swollen, take at least some now.

I planted Kale last fall that is still growing now. It has been through the worst winter and ravaged by groundhogs. It just keeps coming back.

I'm not sure how peas work, but I leave most of my plants intact all year long. My mint dies off every year and springs back to life after winter. It's insane how they just come back without any sort of help.
