Hydrangea help

Anyone know what is going on with my hydrangea? In spring, it gets completely covered with blossoms and is so beautiful. (I deadheaded most of the fading blossoms before this photo). The leaves are green until about this time of year (but a light green, not a dark green like most hydrangeas that I have seen). Last year, they just kept turning more and more of this reddish purple color. Thinking it may be a water issue, I have focused on doing a deep water every few days, but it hasn’t helped.

Also, this guy is very overgrown this year! How far down could I prune this type of hydrangea this winter?
