Hi! The best time to harvest cucumbers is when they reach the desired size for the variety you’re growing, typically about 6-8 inches long for slicing cucumbers. The texture should be firm and the color should be a vibrant, uniform green. If they start to get softer or turn yellow, they may be overripe. Harvesting them when they are still firm will give you the best taste and texture.
Good luck!!

A comment about yellowing. Yellowing on the ground contact side is normal and usually runs lengthwise. This is just from lack of sun exposure.

Yellowing starting from an end is a sign things are getting overripe. Expect these to be seedy.

Don't be afraid of picking too early, these tend to have minimal smaller seeds. I do an end of year harvest gathering anything over 1.5 inches and make pickles or relish.

They are a bit like blowing up a long balloon, they pop out thin and then start to thicken along the length. Let them get an even thickness, but sometimes there is a bit on the end which will always stay thin. TBH I still find harvesting a bit of a guessing game, but it's one you get better at.
