Difficult to see what the hedge is, Tetters could well be right. Lonicera is the general name for honeysuckles, there are hundreds of them of all sorts of habit, but the general characteristic is that they have leaves in opposed pairs along the stem, which makes them easy to identify.
Lavender is a great idea, you want something on that slope to stop erosion. It is another one with different types, I think nearly fifty different species and lots of different cultivars, so pick and choose a bit, there. Same thing with the thyme, over 300 species and lots of cultivars with different colour flowers and foliage, and different scents. It's worth spending a bit of time on research.
