I grow some salad in my garden.
As for other greens, I dream of growing broccoli. It's one of my favorite vegetables, I eat it almost every day. Usually, I cook it and add to my buckwheat:)

Rainbow Chard is my favorite - as not only does it look extremely attractive when growing in the vegetable patch but its extremely versatile too - which as you can eat both the stalks and the leaves - its like having two different vegetables and as it only takes up the space of one - its a space saver too :)

Spinach all the way, not sure what kind I was growing and my outcome wasn't that good due to me not knowing exactly what to do when it came time to cut them. Fast growers though, plus they are good in salads.

I've gone for some of the options on this site, and in particular this page.

http://www.realseeds.co.uk/wintersowing.html

They also have a summer sowing guide.

You'll find no hybrids or genetically modified seeds, they are all heirloom or varieties that are real, open-pollinated seed (non-hybrid).
They also have a wealth of info of seed saving and all things sustainable.
I bought from them recently with no problems.
