Fall Mode?

What puts plants into Fall Mode?

The reason I'm asking is I see trees and such going into Fall mode even though there has not been a frost.

I have plants I want in Spring and Summer.

I was reading and came up with what I thought it is a matter of hours of light so if I move everything to the Greenhouse and have Grow Lights on a few hours all should be good.
