Do storage beets taste as good as red table beets?

Living in New England, I'm interested in growing some storage beets this coming season in order to be able to preserve them through next winter. I'm nervous about the taste and quality, though. Do you notice a difference between the taste in red table beets and storage beets? Are they even worth growing? I would want to use them in side dishes like potato salads, so would the taste even need to be that potent to begin with? Thanks!

I think they are fine. I'm not really sure what the difference would be. Beets are s root, and root vegetables keep very well. If say go for it. If they aren't to your liking you don't have to do it again.

The good thing about bets is they can be stored through typically any type of weather, as long as you have a storage cellar/basement that is that "Musty" type of feel to it, they'll weather very good and when you go to boil them, stew them, or generally cook and use them in side dishes would still have that out-of-garden taste, and like headfullofbees said, you will never believe how worthwhile it is to grow them.

I live in the states, in Pennsylvania. We have harsh winters here, getting anywhere from two to eight meters annually, so I had to learn to grow stuff for later harvests that would keep - such as potatoes, radishes, beets, and onions. These will naturally keep if stored in a cellar and you watch them. I would avoid freezing them and then thawing out if you're saving them because it ruins the taste and makes them a bit "Stringy" when you use them in side dishes.

Hopefully some of this helped!
