We have 6 white crepe myrtles that are turning yellow and losing their leaves, down here near San Antonio, TX. The weather's been cooling, with lows at night in the 40s, sometimes in the 30s, daily highs in the 60s and 70s. A neighbor down the street, however has some that are still solid green, with thick, rich bright pink blossoms, like it was still springtime. I'm wondering if it's because they have a different variety from ours, or if something's wrong.

Yes, different varieties can go into dormancy at different times just as different varieties can bloom at different times. The Natchez variety is white and generally has a long bloom time. The Pocomoke variety is pink.

I've also found that age and amount of sunlight can also affect dormancy start in my crepe myrtles. I have several 50+ year old ones that have not yet gone into dormancy here in East Texas.

I wouldn't say so. They are probably just watering and fertilizing them often. I have 5 different types of crepe myrtle and all but one are starting to lose leaves. The one that hasn't started yet is in a more protected spot, gets less wind, more heat and more water because it's near to a flower bed that gets more water than the rest of them.

Yeah, these are Natchez, about 6 feet tall. We planted them last year.
Most likely your neighbors' is different variety.

AI (and my years of experience with different crepe myrtle) says in answer to your question "Yes, different varieties of crape myrtle can go dormant at different times"
